Mix 1 sliced scallion, 2 tbsp. mayo, 1 tsp. lemon juice, and 1/2 tsp. sesame oil. Fold in 1/2 lb. of cooked shrimp. Spoon mix onto endive leaves. Season with salt and pepper.
