Instant Expert!: How to Caramelize Onions

You've all heard about caramelizing onions. What does that really mean? Well, just think about caramel. It's brown and sweet, you're gonna cook those onions until they're silky, smooth and soft. The only thing you need to remember is this does take time. The first step is to chop up about three to four onions. Thin half rings are most versatile but you can go full rings, chunks, chopped. Then pour two tablespoons EVOO into a skillet. Throw in three tablespoons butter and cook over medium high heat until it's melted and rippling hot. Now, get those onions cooking. Throw them in and season with salt and pepper. Cook the onions for about five minutes without stirring until they start to brown on the bottom. Now, lower the heat to medium, stir the onions until they're coated with oil and beginning to soften. That's about five minutes. Now, the onions are starting to brown or caramelized as their natural sugars cook down and intensify. Scrape the browned onions and any bits of the bottom of the pan. Lower the heat to medium low, now be patient because you're gonna need to cook these babies for another 15 minutes. The whole process should take about 20 to 30 minutes. Yes, that long.
