How to Make a Stuffed Chicken Breast

-I'm Diana Sturgis, the Test Kitchen Director at Every Day with Rachael Ray Magazine. Today, I'm going to be stuffing a chicken breast. This chicken has skin and bone on. This is crazy, but I'm going to be stuffing this chicken breast with pasta that's already been cooked. So, in a way, the side dish is going inside the chicken. Watch me. I'm going to lift the breast skin from the muscle. Now, you can see, I have been working my fingers under the skin. I'm making a nice pocket here, quite a big pocket because I'm going to be putting in the stuffing. It's going to add flavor, moisture and texture, although this chicken will be a little more flavorful because it's on the bone and because it has the skin. So, this stuffing has small shell pasta that's been cooked and it's been mixed with three different cheeses and some parsley. So I'm pushing it in with my fingers. See? You don't even need a knife. It's very easy to do. A bit more. You could use your fingers if you like too. If you wish to use a spoon, you can. And if you don't like handling more chicken, you can put on plastic gloves. Some people do that. Put little thin ones. There we go. Now, I'm going to stretch the skin over the flesh. This way, smooth it down. Try and keep it neat. And pull it. And the skin will actually cook back on to the breast and the stuffing will remain snugly inside. It looks good. Move it over here. I'm going to move my cutting board. Underneath, I put a wet cloth because it stops the board from sliding around especially if your board isn't quite leveled on the smooth surface. And here, I have a chicken breast that's been stuffed in the same way. And this particular recipe called for rolling it in egg and then in bread crumbs. It gives it a nice, crispy finish when it goes in the oven. It adds a little more-- but I just wanted to show you the stuffing part which I think is kind of unconventional putting pasta under her skin. How would you do that? There's the filling.
