Instant Appetizer: Crab Cocktail Spread

-Hi, I'm Tracey Seaman. I'm the test kitchen director at Every Day with Rachael Ray Magazine. And today, we're gonna make a really great instant appetizer using just 4 ingredients. We're gonna start with cream cheese, and egg cocktail sauce, and some crab meat and then a little sprinkling of fresh herb to brighten up the plate. I have a dish that's-- It's about a 1-quart container. You can use a 9-inch pie plate. A 9-inch square baking dish. You don't need it to be too deep. First, the cream cheese in the dish. This is 1 pound of regular cream cheese. You can use light cream cheese if you want. You can use fat free and just take a regular kitchen spoon and spread that cream cheese around the bottom of the pan. My friend, Jodie, is the one who taught me about this appetizer a long time ago. He's also the person that introduced me to cosmopolitans before they were famous. And I haven't had one as good since. And I could use one now. Alright. So, we spread the cream cheese around and it's okay if it's not smooth. You can have it be kind of ripplely and you pour on the sauce. And if have a little trouble getting the sauce out of the bottle, you could start it with a knife, but this is working fine. It doesn't have to be perfect. Also, if you want, you could use salsa instead, spicy salsa or mild. And if you're not a seafood lover, from the top, you could put chicken-- chopped chicken and shredded cheddar cheese or you could put black beans and some pepper jack cheese. There's a lot of different things you could do. You could substitute shrimp for the crab. Now, this is back fin lump crab meat. It's nice and flakey. You can use jumbo lump, but that's a lot more expensive. I like to buy my crab at my warehouse grocery store because you can get a 1-pound container or two 8-ounce containers for a lot more reasonably then at the grocery store sometimes, but I always like to use crab meat that's refrigerated and not from the tuna fish oil 'coz it's always a better quality. You can see when you're crumbling it top of the sauce, there's no shells that I can feel at all in here, which is great. So, you don't have to do a lot of picking through and worry that someone's gonna bite down on the shell. So, these are two 8-ounce containers. I'm gonna put them in. Now, this is really great appetizer if you have friends over for a drink before you go out or you could have it before a holiday meal, or cook out, or-- it just is great anytime. And then I'm gonna add a little sprinkling of chopped fresh chives on the top. It adds flavor and color. I love chives. They're my favorite, I think. We're gonna chop that. Do whatever you like, whatever you're comfortable with. If you want them fine, you could do them fine or you could do half-inch pieces. Just sprinkle and then we have some just plain water crackers. You can use saltines. You could use little toasts. I'm just gonna put these out on a dish. You could use a basket or whatever your favorite thing is. These are great for using your favorite little dishes that you have that you hardly get to use and then put a spreader. And the best thing about this is it's as easy to eat as it is to make. You gotta dig down when you're spreading this so you get a little bit of everything on your cracker. This is the greatest. I wish I have one of those cosmopolitans. Thanks for watching.
