Instant Appetizer: Goat Cheese Cake

Hi. I'm Tracey Seaman, the Test Kitchen Director at Everyday with Rachel Ray Magazine. Today we're doing an instant appetizer using goat cheese. If you've never tried goat cheese before, this is a really great way to try it. Now I'm gonna do 3 different flavors on top of the goat cheese. So I'm gonna cut the goat cheese into 6 equal pieces. You don't need any special tools for this. Just a knife and a cutting board and some of your favorite flavored things. I'm cutting the cheese into 3 pairs of rounds. You'll be amazed how pretty this looks when it's done and it takes seconds. We're gonna add a sprinkling of delicious extra virgin olive oil. The olive oil flavors the cheese and also helps the toppings stick. First, I'm gonna use Herbes de Provence. These are dried herb blend that you can get in your spice aisle. It contains thyme and lavender and sometimes fennel seeds. I'm also adding some crushed red pepper flakes for a little bit of heat and pretty color. The second pair is getting toasted, finely chopped pecans. You can use any kind of nut that you like, toasted walnuts, pistachios. You could use a combination of pistachio and chopped cranberries during the holiday. You could also try anchovy or caper or olives, any briny, very flavorful ingredient like that. Here I'm gonna use sundried tomato seasoned with herbs and packed in olive oil with garlic. And then they're all gonna get a nice sprinkling of pepper and salt. I like to use a kind of a coarse salt like Kosher salt because it keeps the salt flavor a little bit separate and adds added texture. I'm gonna serve these with toasted baguette slices that are lightly brushed with olive oil and sprinkled with salt before baking in a 375 oven for about 10 minutes. You can use your favorite cracker or crusty bread. Anything is great. These all look so beautiful and it took just seconds to prepare. I don't know which one I wanna try first. Thanks for watching.
