BUCKHORN EXCHANGE More than 400 stuff ed animal heads adorn the walls at this 113-year-old joint, and almost as many creatures show up on the menu: Besides the New York strip steak ($32), the place serves rattlesnake, elk and deep-fried bulls' testicles. Need a drink before you dig in? There's an extensive whiskey list. (1000 Osage St., 303-534-9505)
BASTIEN'S RESTAURANT The once-seedy strip around this 69-yearold spot has been taken over by swanky new cocktail lounges, but insiders know that the party is still here. Townies take comfort in the classics: ice-cold martinis and 16-ounce New York Sugar Steaks ($22), which are coated with sugar, then broiled. (3501 E. Colfax Ave., 303-322-0363)
