The Spot
Twenty-five-year-old Sheri Davis of Sheri's Edible Designs (843-683-3132, sherisedibledesigns.com) creates cakes for locals and for the couples who get married on this laid-back island. The mother of two typically takes four clients per weekend, and books up to two years in advance. Busy lady!

The Specs
Her best-selling flavor, It's Island Time (from $7.50 per slice), is a vanilla cake that has been tinted lime green and soaked in tequila, margarita mix and salt. Layered between homemade lime curd and vanilla buttercream, the cake is both sweet and tart.

Austin, Texas

The Spot
Angela Jiles embraces Austin's live-music culture (her husband plays upright bass), calling herself a "confection composer" at the aptly named Blue Note Bakery (512-797-7367, bluenotebakery.com).

The Specs
Wedding guests are surprised when the South Austin cake (from $4 per slice) is cut to reveal a tie-dyed kaleidoscope of color. Angela developed the effect as a teenager, experimenting with cake mixes and food dyes. Today, she bakes only from scratch and can apply the tie-dye method to any white cake flavor, like Ginger Orange with Dreamsicle Icing.


The Spot
Anise, whiskey, mango juice -- few ingredients are taboo at Celebration Generation Cakes (612-388-9409, celebrationgeneration.com). These unusual flavors go into Marie Porter's beautiful cakes, which reflect past careers as a floral, graphic and fashion designer.

The Specs
Inspired by Porter's trips to Indian restaurants, Chai Spice (from $6.75 per slice) is a moist cake made with brewed black tea, vanilla bean, cardamom, cinnamon, cloves and nutmeg. It's the bakery's most popular flavor. Replicate it at home with the packaged cake mix ($11), sold online.

The Spot
Cakes by the Pound (626-284-8142, cakesbythepound.com) is owned by Mendy Pound, who learned to make impressive cakes in Vienna and Switzerland after earning a baking and pastry arts degree from Johnson & Wales University. Pound customizes each cake stand to match the cake.

The Specs
Health-conscious L.A. brides love that the Old-Fashioned Red Velvet Cake (from $8.50 per slice) is dyed with pureed beets, not artificial coloring. Amaretto and almond liven up the cake's flavor, Godiva white chocolate sweetens the icing, and pecan pralines add crunch.
