Get Fresh: Sugar Snap Peas

Buy
smooth and plump emerald-colored pods that "snap" when broken in half.
Select
pods that are no more than 2 1/2 inches in length (overgrown peas will be tough).
Prep
by snapping off the stem end and removing the flosslike strand that runs along the seam.
Refrigerate
in a plastic bag with a paper towel for about 5 days (the paper towel keeps the peas from spoiling).
