Judge Greg Mathis' Pork Ribs with Spicy Barbecue Sauce

1 1/2 cup cider vinegar 2 tablespoons corn syrup 1 tablespoon grill seasoning Salt and pepper Eight 1 1/2- to 2-inch-thick pork ribs (about eight pounds total) 2 cups ketchup 1/4 cup steak sauce 3 tablespoons brown sugar 3 tablespoons extra-virgin olive oil 2 tablespoons hot pepper sauce 2 tablespoons spicy mustard



1. In a large bowl, combine 1 cup water, 1 cup vinegar, the corn syrup and grill seasoning; season with salt and pepper. Add the ribs, submerging the meat as much as possible. Refrigerate for at least 2 hours.
2. Preheat the oven to 350°. In a medium bowl, make the barbecue sauce: Stir together the ketchup, steak sauce, brown sugar, olive oil, hot sauce, mustard, 2 teaspoons salt, the remaining 1/2 cup vinegar and 1/2 cup water.
3. In a baking dish, place the ribs side by side; pour in 1/4 cup water. Cover and bake until cooked through, 1 hour.
4. Preheat a grill or grill pan to medium. Brush the ribs with the barbecue sauce and grill, turning frequently, until browned, about 10 minutes.
