
Northern Italy is big on pig. In Trentino-Alto Adige, pork legs are spiced and smoked to make a rich ham called speck.
THE TOPPINGS:
- 2 zucchini
- 2 tbsp. EVOO
- 3 oz. thinly sliced speck (or prosciutto)
Preheat grill to medium. Slice zucchini lengthwise 1/4 inch thick. Place in large bowl and drizzle with EVOO; season. Transfer to grill, cover and cook, turning, until charred and tender, about 5 minutes. Cut crosswise into thin strips. Return to bowl; let cool. Cut speck crosswise into thin strips; toss with zucchini and season. Divide among toasts.
