Red Wine Linguine

Makes: 6 servings
- 1 pound linguine
- 2 cups plus 2 tbsp. red wine
- 1 tablespoon salt
- 1/4cup EVOO
- 2 tablespoons lemon juice
- 2/3cup shredded parmesan
- 3 tablespoons parsely
- Cook pasta in 2 cups red wine, salt and 4 cups water; drain. Combine EVOO, 2 tbsp. wine and lemon juice; toss with pasta and half of parm. Top with rest of parm and parsley.
