Makes: 4 servings

Ingredients
  • 3/4 cup pitted green olives
  • 1 slice whole wheat bread
  • 1 teaspoon lemon zest
  • 4 mahi-mahi fillets (4 oz. each)
  • Salt and pepper
Directions
  1. Process olives, bread and lemon zest to a paste. Lay fish, skin side down, on a lined baking sheet; season. Top fish with paste. Bake at 400 degrees for 8 minutes, then broil 2 minutes to crisp crust
