Ingredients
- 2 persian cucumbers
- 1/4 cup goat cheese
- 1 tablespoon chopped fresh mint
- 1 cup blueberries
Directions
- Trim cucumber ends, then cut crosswise into 1-inch pieces. Scoop out most of seeds, leaving bottoms to form cups; season. Fill cucumber cups with cheese, mint and blueberries.
