Asian Coleslaw

Makes: 8 servings
- 1/4cup soy sauce
- 3 tablespoons rice vinegar
- 1/4cup chunky peanut butter
- 7 cups shredded red cabbage
- 1/2cup finely chopped mango
- 1/3cup finely chopped fresh mint
- Whisk soy, vinegar and peanut butter; toss with cabbage, mango and mint. Serve with ribs.
