Mediterranean Pita Pizzas

- 1 small eggplant, thinly sliced
- 2 tablespoons EVOO
- 2 pitas
- 1/2cup tzatziki
- 6 sliced cherry tomatoes
- 5 sliced olives
- 1/4cup feta cheese
- 1 tablespoon chopped mint
- Toss eggplant with 1 tablespoon EVOO; grill 6 minutes. Brush pitas with 1 tablespoon EVOO; top with tzatziki, grilled eggplant, tomatoes, olives and feta. Bake 20 minutes at 350 degrees . Sprinkle with mint.
