Spread freshly roasted garlic on crackers or crusty bread for an easy appetizer. Add leftovers to scrambled eggs or pasta with parmesan.

Makes: 6 servings

  • 6 heads garlic
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons salt
  1. Preheat the oven to 400 degrees . Remove any loose skin from the garlic heads and cut a 1/4-inch slice off the tops, exposing the tips of the cloves. Set the garlic heads cut side up on a sheet of aluminum foil and sprinkle with the olive oil and salt. Wrap the heads in the foil and roast until tender, about 45 minutes. Let cool before peeling.
Tip For keeps
  • Cover roasted garlic with olive oil in an airtight container.
