Pistachios with Anise and Orange

  • 8 Servings

Ingredients:

  • 1 tablespoon superfine sugar
  • 1 teaspoon ground aniseed
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • Grated peel of 1 orange
  • 1 1/2 cups shelled raw pistachio nuts

Directions:

  1. Preheat the oven to 350°. In a bowl, combine 1 teaspoon each superfine sugar, ground aniseed and salt. In a skillet, heat 2 tablespoons vegetable oil over medium heat. Add the grated peel of 1 orange and 1 1/2 cups shelled raw pistachio nuts and cook, stirring, for 5 minutes. Transfer the nuts to a baking sheet and toast in the oven for 8 minutes. Toss the toasted nuts in the sugar mixture.
