Makes: 4 servings

  • Vegetable oil
  • 1 1/2 cups blackberries
  • 1/4 cup blackberry jam
  • 1 teaspoon sherry vinegar
  • 1/8 teaspoon cayenne
  • 4 cod fillets (7 oz. each)
  • 1 bunch  watercress, trimmed
  1. Oil grill or grill pan; preheat to medium-high. In bowl, crush berries with a fork; stir in jam, vinegar and cayenne. Season cod. Grill, covered, until fish is just cooked, about 3 minutes per side. Divide watercress among 4 plates. Place fish on watercress; top with sauce.
