Parmesan Crackers

Makes: 6 servings

  • 1 cup grated parmesan
  • 3/4 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons EVOO
  1. In food processor, mix 2/3 cup cheese, flour, baking powder and salt. Add 1/4 cup water and 2 tbsp. EVOO; pulse to form a dough. Roll out on floured, parchment-lined 11-by-14-inch baking sheet; prick, top with remaining EVOO, cheese and pepper. Bake at 375 degrees for 17 minutes; break into pieces.
