Makes: 4 servings
- 1/4 cup red wine vinegar
- 2 tablespoons dijon mustard
- 1 tablespoon minced shallot
- 1/4 teaspoon salt
- 2/3 cup EVOO
- Salt and pepper
- In a bowl, whisk together all ingredients except EVOO. Slowly drizzle in EVOO, whisking constantly; season with salt and pepper.
- Swap the red wine vinegar for balsamic.
- Add a few tablespoons of chopped fresh herbs. Dill, parsley, tarragon and chives are all good choices!
- Add 2 tbsp. orange juice and 2 tsp. fresh orange zest.
