Makes: 4 servings

  • Red, yellow or green bell peppers, cut into rounds, remvoing seeds
  • EVOO
  • Salt and freshly ground black pepper
  1. Slice bell peppers horizontally into thick rings, removing any seeds.
  2. Add enough EVOO to a nonstick skillet to cover the bottom and heat over medium-low.
  3. Once the skillet is hot, add the pepper slices and crack an egg into each. Cover and cook until the egg whites are set, about 5 to 8 minutes, then sprinkle with salt and freshly ground pepper.
