Makes: 4 servings

Ingredients
  • 4 slices bread
  • 8 basil leaves, plus 1/2 cup chopped
  • 8 ounces fresh mozzarella, cut into 10 slices
  • 1 tomato, sliced
  • 1 1/2 tablespoons EVOO
  • 1 teaspoon white wine vinegar
  • 1 clove garlic, chopped
Directions
  1. Preheat oven to 375 degrees . Top each bread slice with 2 basil leaves, 2 cheese slices and 1 tomato slice. Bake 8 minutes. Whisk EVOO, vinegar and garlic. Dice remaining cheese and tomato; mix with dressing and chopped basil. Spoon on toasts.
