  • 3 pounds chicken wings, joints separated, tips discarded
  • 1/2 teaspoon salt
  • 1/2 cup hot sauce
  • Celery sticks and bleu cheese dressing, for serving
  • Crumbled queso fresco
  • Sliced scallions
  1. Arrange wings on baking sheet and season with salt.
  2. Broil on top rack of oven, turning once, until skin is golden-brown, 25 minutes.
  3. Transfer wings and pan juices to bowl. Toss wings with hot sauce. Top with crumbled queso fresco and scallions.
