Makes: 2 servings

  • 1/2 cup crumbled feta
  • 1/4 cup mayonnaise
  • 2 teaspoons red wine vinegar
  • 1/4 teaspoon dried oregano
  • 6 slices bread, toasted
  • 1/4 pound sliced turkey
  • 1/4 cucumber, sliced
  • 2 tablespoons black olive tapenade
  • 1 tomato, sliced
  • 1/4 red onion, thinly sliced
  • 4 leaves bibb lettuce
  1. Mix feta, mayonnaise, vinegar and oregano. Spread some onto 1 piece of toast; top with half of turkey and cucumber. Stack with another piece of toast; spread with 1 tbsp. tapenade. Top with half of tomato, onion and lettuce. Spread some feta mixture onto another piece of toast; close sandwich. Secure with toothpicks. Repeat with remaining ingredients.
