Smoked Trout Chips

Makes: 8 servings

  • 2/3 cup sour cream
  • 2 tablespoons snipped fresh chives
  • 2 tablespoons chopped fresh dill, plus sprigs for garnishing
  • 2 smoked trout fillets (4 oz each) skin removed
  • 40 ridged potato chips
  1. In bowl, mix sour cream, chives and dill; season. Break trout into pieces. Arrange chips on platter. Dollop each with some sour cream mixture. Top each with piece of trout and dill sprig. Serve immediately
