Makes: 4 servings
- 1/3 cup EVOO
- 2 tablespoons fresh lemon juice
- 1 can (15oz) cannellini beans, rinsed
- 3 large scallions, sliced
- 1 head radicchio, sliced
- 3/4 cup shaved asiago
- In large bowl, mix EVOO and lemon juice. Add beans and scallions; toss. Add radicchio; toss and season. Add cheese; toss gently.
