  • 2 plums, chopped
  • 1/4 cup sugar
  • 2 teaspoons fresh lemon juice
  • 2 cups vanilla ice cream, softened
  1. Toss plums with sugar and lemon juice. Gently fold into ice cream. Pack into eight 3-oz. paper cups. Freeze until just firm, about 1 hour. Tear away cups; serve immediately. Makes 8.
