Groovy Garbanzo Burgers
Yield: Makes 4.
- 2 15 ouncecans garbanzo beans, drained
- 1/2cup parsley leaves
- 1/3cup plain breadcrumbs
- 1 1/2teaspoons ground cumin
- 1/2teaspoon salt
- 1 egg
- 2 tablespoons EVOO
- 4 hamburger buns
- lettuce, tomato and mayo, for topping
- In food processor, puree first 6 ingredients; form 4 patties. In skillet, heat EVOO over medium; cook patties, 3 minutes per side. Serve on buns with toppings.
