Makes: 2 servings

  • 8 ounces chicken breast
  • 1 cup flour
  • 1 egg, beaten
  • leftover breadcrumbs (from Herby Spaghetti Salad)
  • 8 cherry tomatoes
  • 8 small cubes mozzarella
  • 3 tablespoons dijon mustard
  • 3 tablespoons honey
  • 3 tablespoons mayo
  1. Preheat oven to 400 degrees . Cut chicken into bite-size pieces. Place flour, egg and breadcrumbs in 3 separate bowls. Toss chicken in flour, then dip in egg, then in breadcrumbs, turning to coat. Bake on parchment-lined sheet until golden-brown and cooked through, 25 minutes; let cool. Thread chicken onto 4 skewers, alternating with tomatoes and cheese. Mix mustard, honey and mayo in bowl. pack with skewers.
