Cock-a-Doodle Skewers with honey-Mustard Dipping Sauce
Makes: 2 servings
- 8 ounces chicken breast
- 1 cup flour
- 1 egg, beaten
- leftover breadcrumbs (from Herby Spaghetti Salad)
- 8 cherry tomatoes
- 8 small cubes mozzarella
- 3 tablespoons dijon mustard
- 3 tablespoons honey
- 3 tablespoons mayo
- Preheat oven to 400 degrees . Cut chicken into bite-size pieces. Place flour, egg and breadcrumbs in 3 separate bowls. Toss chicken in flour, then dip in egg, then in breadcrumbs, turning to coat. Bake on parchment-lined sheet until golden-brown and cooked through, 25 minutes; let cool. Thread chicken onto 4 skewers, alternating with tomatoes and cheese. Mix mustard, honey and mayo in bowl. pack with skewers.
