Makes: 4 servings

Ingredients
  • 3 cups shredded carrots
  • 2 teaspoons honey
  • 1 teaspoon white wine vinegar
  • salt & pepper
  • 1 1/2 pounds ground beef chuck
  • 1/4 cup grated sweet onion
  • 3 tablespoons ketchup
  • 2 teaspoons EVOO
  • 4 hamburger buns, toasted
Directions
  1. Mix carrots, honey and vinegar; season with salt. Mix beef, onion, ketchup, 1 tsp. salt and 1/2 tsp. pepper; make 4 patties. Heat EVOO in large skillet over medium-high; brown burgers on both sides, about 10 minutes for medium. Serve on buns topped with carrots.
