Makes: 2 servings
- 1 1/2 pounds bone-in prime rib steak at room temperature
- Coarse and fine sea salt
- 1 teaspoon EVOO
- Coat steak with 1/2 tsp. coarse sea salt. Coat baking sheet with EVOO; add steak and cook at 300 degrees on top rack of oven until internal temperature registers 120 degrees , about 25 minutes. Increase heat to broil, flip steak and brown for 3 minutes for medium-rare. Let rest 10 minutes, loosely covered with foil, before carving. Season with fine sea salt.
