Honey-Mustard Vinaigrette

- 2/3cup EVOO
- 1/4cup white or red wine vinegar
- 1 tablespoon dijon mustard
- 2 teaspoons honey
- Salt and pepper, to taste
- In screw-top jar, combine all ingredients and shake jar vigorously. Make it your own: Add fresh herbs, garlic or shallots, or swap in orange juice for some vinegar.
