Bourbon Marinade

Bourbon lends a sweet, cinnamonlike flavor tomeat, and it marries well with acidic fruit, tangymustard and salty soy sauce, says Albert Schmid, author of The Kentucky Bourbon Cookbook.
Makes: 4 servings
- 1 cup orange marmalade
- 1/3cup dijon mustard
- 1/4cup bourbon
- 1/4cup soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon finely chopped garlic
- Combine 1 cup orange marmalade, 1/3 cup dijon mustard, 1/4 cup each bourbon and soy sauce, 2 tablespoons sesame oil, 1 tablespoon finely chopped garlic.
