Pesto Barley with Mozzarella and Cherry Tomatoes

Ingredients
  • 1/2 cup pesto
  • 3 tablespoons extra-virgin olive oil
  • 1/4 teaspoon pepper
  • 1 pint quartered cherry tomatoes
  • 6 ounces fresh mozzarella cheese
  • Salt
Directions
  1. In a large bowl, whisk together 1/3 cup pesto, 3 tablespoons extra-virgin olive oil and 1/4 teaspoon pepper. Add 2 1/2 cups cooked and cooled barley, 1 pint quartered cherry tomatoes and 6 ounces fresh mozzarella cheese, cut into small cubes. Season with salt.
