NASA's Cranberry-Apple Dessert

Tang was once the only treat an astronaut could look forward to after a long day on the moon. Nowadays, space travelers have 180 inventive dishes to choose from.We phoned Houston for one of the most requested: a cranberry-apple-crumb dessert. We have a hard time imagining how it tastes in zero gravity, but here on Earth, it's out of this world!

- 2 cups rolled oats
- 1/2cup sliced almonds
- 4 tablespoons butter, melted
- 1/4cup pure maple syrup
- 3 golden delicious apples, thinly sliced (about 3 cups)
- 8 ounces fresh cranberries
- 1 8 ouncecan pineapple chunks in juice
- 3/4cup brown sugar
- 1/2cup apple juice
- 1/2teaspoon ground cinnamon
- Preheat the oven to 300 degrees . In a large bowl, combine the oats and almonds. Stir in the butter and maple syrup. Transfer to a large nonstick baking sheet. Bake until toasted, about 20 minutes. Let cool.
- Meanwhile, in a Dutch oven or large saucepan, bring the apples, cranberries, pineapple with its juice, brown sugar, apple juice and cinnamon to a boil. Cook, stirring often, for 5 minutes. Lower the heat to medium and simmer, stirring, until the apples are soft and most of the liquid has evaporated, about 30 minutes. Spoon into bowls and serve with the oat topping.
