MAKES ONE DRINK
1/2 lemon, cut into wedges
4 sprigs mint
2 teaspoons superfine sugar
Ice cubes
2 ounces Applejack (4 tablespoons)
In a cocktail shaker, muddle the lemon wedges with 3 sprigs mint and the sugar. Add ice cubes to fill the shaker and pour in the Applejack. Shake vigorously and strain into a rocks glass filled with ice. Garnish with the remaining mint sprig.
