Zucchini-Carrot Mini Muffins

- 3/4cup cake flour
- 1 teaspoon baking powder
- 1/2teaspoon baking soda
- 1/4teaspoon cinnamon
- 1 pinch nutmeg
- 1 egg
- 1/2 sugar
- 3 tablespoons plus 1 tsp. vegetable oil
- 1/2cup grated zucchini
- 1/4cup grated carrot
- 1 pinch salt
- 1/4cup wheat bran
- 1/4cup chopped walnuts
- Cooking spray
- Preheat the oven to 350 degrees . in a bowl, sift the cake flour, baking powder, baking soda, cinnamon and nutmeg.
- In another bowl, whisk the egg, sugar and oil. Stir in the zucchini, carrot and salt. Stir the flour mixture into the vegetable mixture. Mix in the bran and walnuts.
- Grease a mini muffin pan with cooking spray. Fill the cups halfway with the batter. Bake for 12 to 14 minutes. Remove from the pan and let cool.
