- 5 pounds seedless watermelon
- 1 cup sugar
- 1/3 cup lime juice
- 4 4 ounces vanilla pudding cups
- 3/4 cup whipped topping
Cube the flesh of one 5-pound seedless watermelon (about 5 cups). Freeze four 4-ounce vanilla pudding cups. In a blender, puree the watermelon cubes, 1 cup sugar and 1/3 cup lime juice. Strain the mixture into an 8-inch square baking dish, pressing to extract any excess liquid. Freeze, stirring with a fork every 30 minutes, until frozen, about 2 hours. Just before serving, in a medium bowl, briefly thaw the frozen pudding and beat together with 3/4 cup whipped topping, such as Cool Whip. Using a fork, scrape up the frozen watermelon granita. Spoon 1/3 cup of the pudding mixture into each of 4 parfait glasses, fill with the granita and top with the remaining pudding mixture.
