Yield: 6 cups
- 1 cup sugar, divided
- 1 1/2 ounces fresh ginger, peeled and sliced (1/3 cup)
- 1 cup lemon juice, plus 13 strips lemon zest
- In medium saucepan, bring 4 cups water, 3/4 cup sugar, ginger and 5 strips lemon zest to boil. Lower heat and simmer, 10 minutes; discard lemon zest and ginger. Stir in lemon juice and 1 cup water; heat through and stir in remaining sugar to taste. Ladle into mugs and garnish with remaining lemon zest strips.
