Ingredients
  • Cooking spray
  • 3 slices white sandwich bread
  • 1/4 cup milk
  • 1 1/2 pounds ground pork
  • 1/2 pound ground beef
  • 1 cup diced carrots
  • 1/2 cup diced daikon
  • 1 cup chopped cilantro
  • 3 tablespoons fish sauce
  • 1 small onion, grated
  • 1 clove garlic, grated
  • 1 egg, lightly beaten
  • Salt and pepper
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • Sriracha
  • Mayonnaise
Directions
  1. Position a rack in the upper third of the oven; preheat to 400 degrees . Line a baking sheet with foil; coat with cooking spray. Using a food processor, pulse the bread into crumbs; in a bowl, combine with the milk. Let sit for 5 minutes.
  2. Combine the breadcrumbs, ground pork, ground beef, onion, garlic, egg, carrots, daikon, cilantro, fish sauce, 1 tsp. salt and 1/2 tsp. pepper. Shape into a 5-by-8-inch rectangle on the sheet.
  3. In a bowl, stir together the ketchup, brown sugar and 3 tbsp. sriracha; spoon half of the mixture over the loaf, spreading to cover. Bake, coating with the remaining glaze halfway through, until a thermometer inserted in the center registers 160 degrees , 40 minutes. Let rest for 10 minutes before slicing.
  4. Serve with a side of mayonnaise seasoned with more sriracha.
