Sweet Potato Hash

Ingredients

  • 1 1/4 pounds sweet potatoes, diced
  • 1 red onion, chopped
  • 2 tablespoons EVOO
  • 1 cup finely diced cured chorizo
  • 2 teaspoons chopped rosemary

Preparation

Boil potatoes until tender, 5 minutes; drain. In skillet, cook onion in EVOO over medium, 5 minutes. Add chorizo and rosemary; cook 2 minutes. Stir in potatoes; cook over low, 10 minutes. Season.
