Yield: 8 summer rolls
- 8 7 inches rice paper wrappers
- 24 thawed frozen precooked shrimp
- 2 avocados, pitted, sliced
- 1/2 cup peanut sauce
- 8 romaine leaves
- Working 1 at a time, soften wrappers in water; place on a work surface. Line 3 shrimp in center; top with avocado. Fold one long side over filling. Fold in short sides; roll up. Spread sauce on leaves. Top with summer rolls.
