Spring Greens Coleslaw

Ingredients

  • Green Cabbage Coleslaw
  • 10 raw asparagus spears
  • 6 raw baby artichokes
  • Fresh mint
  • 6 tablespoons EVOO
  • Fresh lemon juice

Preparation

Cook Green Cabbage Coleslaw.

Use a handheld slicer to shave 10 raw asparagus spears and 6 raw baby artichokes (woody stems and dark outer leaves trimmed away) into the cabbage mixture. Add fresh mint. Replace the mayo with 6 tbsp. EVOO and swap in fresh lemon juice for the vinegar.
