Spinach Tabbouleh
Makes: 6 servings
- 1 cup bulgur
- 1 onion, sliced
- 2 tablespoons EVOO
- 4 cups baby spinach, chopped
- 1/2cup walnuts, chopped
- Cook bulgur according to package directions. In skillet, cook onion in EVOO over medium, stirring often, until very brown, 20 minutes. In bowl, toss bulgur, onion, spinach and nuts; season.
