Yield: 24 hush puppies

  • 3 cups vegetable oil
  • 1 cup chopped scallions
  • 1 egg
  • 1 cup corn muffin mix
  • 1/2 cup (packed) grated sweet potato
  • Hot sauce
  1. In pot, heat oil to 350 degrees . In bowl, whisk scallions and egg. Stir muffin mix and potato into scallion mixture. Working in batches, fry heaping teaspoonfuls of batter, turning, until golden. Drain and season. Serve with hot sauce.
