- 4 6 ounces skin-on, center-cut salmon fillets
- 1 1/2 cups mashed potatoes
- 1 tablespoon chopped fresh dill
Arrange salmon, skin side down, on foil-lined baking sheet; season. Mix mashed potatoes and dill; layer on salmon. Bake at 300 degrees for 10 minutes; run under broiler to brown potatoes.
