Roasted Cauliflower with Couscous & Mint

Ingredients

  • 1 head cauliflower, cut into florets
  • 4 shallots, quartered
  • 1/2 cup olive oil
  • 1 cup mint leaves
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 cup Israeli couscous

Preparation

On baking sheet, toss vegetables with 1/4 cup oil. Roast at 450 degrees until golden, 20 minutes. Puree mint, zest, juice and remaining oil. In bowl, toss all ingredients.
