Makes: 4 servings

Ingredients
  • 3 eggs
  • 1 cup milk
  • 1 orange, zested
  • 2 teaspoons sugar
  • 8 slices  white bread
  • 1 pound rhubarb, diced
  • 1 cup pure maple syrup
Directions
  1. On rimmed baking sheet, whisk eggs, milk, zest and sugar. Soak bread in egg mixture, turning once, 10 minutes. In skillet, cook rhubarb in maple syrup over medium until tender, 5 minutes. On greased nonstick griddle, cook french toast. Top with rhubarb syrup.
