Reuben-Stuffed Potatoes

Ingredients

  • 4 potatoes, poked with fork
  • 2 tablespoons butter
  • 4 ounces corned beef, chopped
  • 3 tablespoons thousand island dressing
  • 1 cup sauerfraut
  • 4 ounces sliced swiss
  • Parsley

Preparation

Preheat oven to 425 degrees . Microwave potatoes on high 10 minutes. Turn; cook 7 minutes. Cut off top third of potatoes; scoop out flesh. Mash with butter; return to potato shells. Top with rest of ingredients. Bake 10 minutes.
