Makes: 4 servings
- 2 slices bread, toasted
- 2 tomato slices, 1/2 inch thick
- 1 tablespoon EVOO
- 2 tablespoons grated Pecorino
- Using a cookie cutter about the same size as the tomato slices, cut a hole in the center of each piece of toast. Place toast (and toast circles) on baking sheet; fit tomato slices inside. Brush toast and tomato with EVOO; sprinkle with cheese. Broil until cheese is golden, 1 minute. Sprinkle with pepper.
